Bicol Express Recipe

If you like spicy dishes then this one is for you. Bicol is not only known for dishes with coconut milk but moreover the chili ones. Get an express taste of Bicol with this Bicol Express. It is a favorite in the house for hubby and me. You can add siling labuyo to make it spicier.

  • 1/4 kilo pork, cubed
  • 3 cups long chili
  • 1 onion, minced
  • 1 head of garlic, minced
  • 1 cup coconut milk
  • 1 cup coconut cream
  • 2 tablespoons of cooking oil
  • Fish sauce to taste

Cooking procedures:

In a cooking pan, heat cooking oil and brown sliced pork for a few minutes. In another pan, sauté minced garlic and onion then add to the sauté the browned pork. Put few fish sauce. Add the coconut milk, bring to a boil and simmer for 10 minutes. Add the long chili and cook until dish gets a little dry. Add the coconut cream and simmer until the sauce thickens. Add fish sauce to taste.
