Igado Recipe

Ingredients: 
  • 1/2 lb pork shoulder, cut into thin slices 
  • 1/4lb pork liver, cut thin slices 
  • 1 pork heart or kidney, cut thin slices 
  • 2-3 hot pepper (optional) 
  • a green pepper 
  • 1 red pepper, sliced 
  • 4 garlic, minced 
  • 1 medium onion, chopped 
  • Marinade: 
  • 3 tbsp soy sauce 
  • 1 tbsp vinegar 
  • 1 tsp ground black pepper 

Procedures: 
Marinate pork in the marinade mixture for an hour or so. Saute garlic,onion,and pork and kidney . Add the marinade and simmer for an hour in low heat. Stir occasionally. Add a little water if it dries up. Add liver, red and green pepper and ..correct seasoning. Igado taste so much better without ginger. Serve with white rice.
