New Year Quotations

Year's end is neither an end nor a beginning but a going on, with all the wisdom that experience can instill in us. ~Hal Borland
Cheers to a new year and another chance for us to get it right. ~Oprah Winfrey
For last year's words belong to last year's language
And next year's words await another voice.
And to make an end is to make a beginning.
~T.S. Eliot, "Little Gidding"
A happy New Year! Grant that I
May bring no tear to any eye
When this New Year in time shall end
Let it be said I've played the friend,
Have lived and loved and labored here,
And made of it a happy year.
~Edgar Guest
The object of a New Year is not that we should have a new year. It is that we should have a new soul and a new nose; new feet, a new backbone, new ears, and new eyes. Unless a particular man made New Year resolutions, he would make no resolutions. Unless a man starts afresh about things, he will certainly do nothing effective. ~G.K. Chesterton

Lucky foods for New Year

Looking for some lucky foods to cook or buy for your media noche to bring luck and make the coming year a prosperous one? Epicurious.com shares these 6 major categories of auspicious foods considering the differences and similarities in traditions:

GRAPES – consume twelve grapes at midnight for 12 prosperous months. In the Philippines, we do prepare 12 rounded-shaped fruits to bring luck.

COOKED GREENS – including cabbage, collards, kale, and chard, are consumed at New Year’s in different countries because their green leaves look like folded money, and are thus symbolic of economic fortune. Maybe I can prepare “chopsuey” or “vegetable salad” to have that lucky green touch in the table.

LEGUMES – these includes beans, peas, and lentils that also symbolic of money. I think the chicharo in my “chopsuey” will be good.

PORK – pigs symbolize progress. My “crispy pata” will be perfect for this.

FISH – symbolizes good luck, fertility, long life and good harvest. My mom will by “sugpo” (big shrimp) and I will make a buttered-garlic shrimp out of it.

CAKES, etc. – special emphasis placed on round or ring-shaped items. Conti’s will help me here. Family loves mango so we will be buying a big “Mango Bravo Cake” and a “Mango Tart.”

WHAT NOT TO EAT
Lobster, for instance, is a bad idea because they move backwards and could therefore lead to setbacks. Chicken is also discouraged because the bird scratches backwards, which could cause regret or dwelling on the past. Another theory warns against eating any winged fowl because good luck could fly away.

Beef Morcon Recipe

I have tasted this “Beef Morcon” several times because mom used to serve it during our town fiesta. She had a friend who is in food business and she occasionally ordered this during fiesta. It is a very good dish especially this holiday. I checked the web for the recipe and I found one from “Filipino Food Recipes.”

Estimated cooking time: 2 to 3 hours.

Ingredients:
  • 1 kilo beef, sliced 1/4 inch thick (3 pcs.)
  • 1/4 kilo ground beef liver
  • 200 grams sliced sausages or ham
  • 200 grams pork fat (cut is strips)
  • 3 hard boiled eggs, sliced
  • 100 grams cheddar cheese in strips
  • 100 grams grated cheddar cheese
  • 2 onions, chopped
  • 5 bay leaf (laurel)
  • 1/2 teaspoon of ground black pepper
  • 1/2 cup vinegar
  • 2 teaspoon salt
  • 2 cups of water
  • 2 meters thread or string (for tying)
Cooking Instructions:

  • Spread and stretch the sliced beef on your working table.
  • Arrange the filling on the sliced beef: sausage strips, cheese strips, sliced eggs, pork fat and some ground liver.
  • Roll the sliced beef with all the filling inside and secure with a thread or string.
  • Repeat the procedure for the two remaining beef slices.
  • On a pot, place the beef rolls and put the water, the remaining ground liver, grated cheese, chopped onions, bay leaves, ground black pepper and salt.
  • Cover the pot and bring to a boil. Simmer for one hour.
  • Add the vinegar and continue to simmer of another hour or until beef is tender.
  • Slice the beef morcon, arrange on a platter and top with the sauce/ gravy poured on top.
Cooking Tips:
  • A spoon or two of flour can be added to water to thicken the sauce.
  • Instead of boiling in a pot, you can use a pressure cooker for faster cooking.
  • Optional: Garnish with olives before serving.

Maytinis Festival @ Kawit, Cavite

Kawit, a historical town in Cavite, (Philippines) takes pride of its highly Hispanized culture and traditions. One of which is the "Maytinis"- a town-wide religious event held every 24th December assaying the Nativity of the Virgin Mary.

About a dozen floats depicting several Biblical characters gather in a procession which usually starts at 8:00 in the evening. These extravagantly adorned platforms are manned by men and women symbolically clad in wardrobes typifying the likes of Adam and Eve, David and Goliath, Moses, etc. to name a few.

It's actually a montage of several religious characters found in the Bible with Holy Couple as the major attraction. A chosen pair of young man and woman is lodged on a float, believed to be Joseph and Mary, re-enacting their seemingly futile efforts of finding a shelter in Bethlehem. The selected couple who are melodious singers, chant some biblical verses/passages, seeking refuge from different homeowners and in retaliation being bombarded with sarcastic remarks, denying them entry into their houses. Several attempts are usually done leading the entire entourage to the Parish Church where a makeshift stable called "BELEN" awaits the Holy Couple. This climatic event's celebrated by several priests in a gleeful, music-filled church ceremony. The altar has been creatively transformed into a cave adorned with lights and life-sized statues resembling the manger where Jesus Christ was born.

At the strike of 12 midnight, the High Mass starts commemorating the Nativity. The whole scenario focuses on the birth of Baby Jesus Christ. A vibrant choir fills the air with songs through the accompaniment of the tambourines and drums, heralding the commencement of Christmas Day. A cherubic image of Baby Jesus Christ is presented to the church-goers, queues of people flock the altar to kiss His image. This is a once-in-a year chance of communing with Baby Jesus.

This rich cultural heritage has been handed down centuries ago and is still annually practiced in this town. A truly concerted effort presented by the Kawiteños which is worth witnessing.

Hon. Reynaldo Laigo & wife killed in traffic accident

Five days before Christmas, another traffic accident happened on Commonwealth Avenue, Quezon City before dawn Monday and took the lives of a couple who were about to attend the “Simbang Gabi.” Victims were identified as retired Makati City regional trial court judge Reynaldo Laigo and his wife Layla. The victims’ black Pajero was rammed at around 4:30am by a Corimba Express Inc. bus. I am hoping that government agencies involve in transportation will seriously do their jobs to eradicate erring bus drivers and keep the highways safe for all the commuters.
