Mommy's Pride

January 21 to 25, 2008 was the Academic Week in the school of my daughter. She was one of the contestants in the MATH, SCIENCE & SPELLING contests. It was a Friday when all the contests were held. First timer on said contests I was there to give my support on her since parents were allowed to come. She was quite nervous on the contest day so I told her to relax and have fun. Don't pressure herself and just concentrate while on stage. We reviewed every given topic for each subject more than 2x, lol. Maybe because since her first time I wanted her to be prepared with everything. On that day, I am one of the proud parents watching the contest. Aside from her being one of the contestants, she won as the GRAND PRIZE WINNER on the three contests for Grade 1 level. To my dear daughter, congratulations and continue your dedication towards your studies. Cheers!!!

Up Close and Personal with Sto. Niño

Every 3rd Sunday of January people from Tondo commemorate one of the country’s renowned and well-celebrated festivals, the feast of Sto. Niño. Fr. Erick Santos, Parish Priest of Sto. Niño Parish, is always the top busiest person every fiesta to see to it that everything will be peaceful and organized. The celebration started with a traditional procession of devotees carrying their Sto. Niño images while dancing in the street. After that it was followed by a pagoda carrying the image of Sto. Niño from Spain accompanied by other 20 smaller boats. Then at a certain point or place the image was transferred into a carrier for procession in different streets of Tondo before sending it back to church. Being part of the procession every year was really an amazing experience for me and actually it is already a “vow” or my commitment to my beloved Sto. Niño to always take part in the procession.

I am thankful and blessed to have a chance of seeing the original Sto. Niño right in a room where it was placed by its caretaker. The image was really amazing and it’s an overwhelming experience to have a glimpse of little Jesus really so close. Thanks to the parishioners and police escort who granted us to see the image despite of tight security they are implementing every festival. Please check some pictures of mine I took last Sto. Niño Fiesta 2008.

Snail is reared in commercial farms for its meat and shell. Snail meat is a delicacy in Asian cuisine, Japanese and Chinese in particular. The French delight escargot as an appetizer. where as in the Americas and Australia, where it is commonly also called abalone, it is consumed also as main meal. In Africa, such as Nigeria and South Africa, land snail called Giant African Snail is also a traditional food. Snail recipes vary from cuisine to cuisine. Studies on the nutritional value of snail have reported that snail is high in protein but low in fat contents. It is estimated that snail is 15% protein, 2.4% fat and about 80% water. This makes snail healthy alternative food for people with high protein low fat diet requirements. Besides, snail is high in health benefiting essential fatty acids such as linoleic acids and linolenic acids. Pinoy Recipe: Adobong pusit or squid

Ingredients:

  • 1 Kilo squid
  • ½ cup water
  • 1 cup white vinegar
  • 1 teaspoon peppercorn
  • 1 pinch of salt
  • 1 head garlic (roughly chopped)
  • 1 medium onion (roughly chopped)
  • 3 pieces tomatoes (diced)
  • ½ tablespoon sugar (optional)
  • 3 tablespoons oil

Procedures:

Wash and clean squid well, making sure the black tint does not burst as it will give bitter taste. In a deep pan, bring the water to a boil along with the squid, vinegar, pepper and salt until squid is cooked. Take out the squid, set aside. Strain the sauce, set aside. In another pan, saute' garlic, onion and tomatoes. Add the squid and pour the rest of the sauce. Add sugar if desired and allow it to thicken or be a little dry in consistency. Serve hot.

Nutritional Information:

The proportion of protein in squid meat varies. The water content of squid normally is between 77-80 percent of the weight of the body, and the protein content between 17-20 percent. The meat of squid caught in summer contains more water and less crude protein than that caught in autumn. Squid meat contains the same kinds of proteins found in fish meat and is equal in nutritional value. Squid is a nutritionally perfect source of protein, which means that it contains all eight essential amino acids in nearly proportioned quantities.

The distinctive sweet taste of squid meat is attributable to the abundant extractive nitrogen present in squid protein. The fat content of the meat varies from one to five percent, being particularly high in cholesterol. But since the quantity of fat is so low, the amount of cholesterol present does not constitute a health hazard, even to those who are on restricted diets. The components of squid meat provide about 85 calories of energy per 100 grams of raw meat.

Squid meat has a higher content of zinc, manganese, and copper than many seafoods, but the muscle tissue has a texture similar to many other seafoods.

100 things to do with kids...

Bonding plays an important role in the family. Parents no matter how busy working in the office or even in the household stuff must give ample time to their kids. Being a housewife for almost 7 years now, I admit that there where times that I forgot to spend time with my kids. I have no helper at home so I do practically all the household things: laundry, ironing, cooking, marketing, cleaning and bits and pieces of chores. There comes a time that my 7-year old daughter came to me and asked me why I kept myself busy with so many things. She told me to relax but what came into my mind was that maybe what she was trying to say was take a break and let’s have time for each other. She spent most of the time playing with her cousins and I thought that’s pretty okay with her, but I guess not. Quality time is still what kids longing for on us as parents and it don’t have to be a big deal. I mean there are many little things that we can do with them, doing things together and having fun together, I guess thats what matters to them.

  • 5 cloves garlic, minced
  • 1/2 cup grated cheese
  • 1/2 cup bread crumbs

Procedures:

Brush each tahong meat with butter-garlic mixture, top with grated cheese and cover with bread crumbs. Arrange tahong on a baking sheet. Bake in pre-heated oven with a low heat (250F). Bake for 10 - 15 minutes.

Nutritional Information:

Mussels are low in calories, containing just 119 kcal per 100g (the same as peas and potatoes). Because we eat them slowly from the shell, we don't tend to eat huge quantities of them. They're a great diet food!

Mussels are renowned for being an excellent source of minerals. They're particularly high in iron and zinc, and also contain phosphorus, folic acid and calcium. They're also rich in Vitamin B12.

Mussels are nourishing and refreshing and contain a good dose of iodine, so there's no reason not to enjoy them regularly.

Malunggay's Nutritional and Medicinal Importance

Moringa oleifera, or the horseradish tree, is a pan-tropical species that is known by such regional names as benzolive, drumstick tree, kelor, marango, mlonge, mulangay, nébéday, saijhan, and sajna. Over the past two decades, many reports have appeared in mainstream scientific journals describing its nutritional and medicinal properties. Its utility as a non-food product has also been extensively described, but will not be discussed herein, (e.g. lumber, charcoal, fencing, water clarification, lubricating oil). As with many reports of the nutritional or medicinal value of a natural product, there are an alarming number of purveyors of “healthful” food who are now promoting M. oleifera as a panacea. While much of this recent enthusiasm indeed appears to be justified, it is critical to separate rigorous scientific evidence from anecdote. Those who charge a premium for products containing Moringa spp. must be held to a high standard. Those who promote the cultivation and use of Moringa spp. in regions where hope is in short supply must be provided with the best available evidence, so as not to raise false hopes and to encourage the most fruitful use of scarce research capital. It is the purpose of this series of brief reviews to: (a) critically evaluate the published scientific evidence on M. oleifera, (b) highlight claims from the traditional and tribal medicinal lore and from non-peer reviewed sources that would benefit from further, rigorous scientific evaluation, and (c) suggest directions for future clinical research that could be carried out by local investigators in developing regions.
