My Turbo Crispy Pata Recipe


The usual way of cooking this Crispy Pata is through deep frying in cooking oil. Quite unhealthy so below is another way to cook it in a healthy manner.

Ingredients:
  • 1 Pata (front or hind leg of a pig including the knuckles)
  • 3 tablespoons of salt
  • Enough water for boiling

Cooking procedures:

Clean the pork pata by removing all hairs and by scraping the skin with a knife. Wash thoroughly. Place it in a boiling ware with enough water and salt. Bring to boil from 50 minutes to an hour or until the pata is fork-tender. Add water as needed. When done remove the pata and let it cool down. Place it in a plastic bag or container then put in the freezer overnight. On the following day, remove it and expose to air to melt down 3-4 hours before your cooking time. Place it in a strainer inside a Turbo Broiler set under 475 degrees. Cooking time is 90 minutes. Cook one side for 45 minutes then the other for another 45 minutes. Avoid uncovering the broiler while cooking to make the skin crispier. Serve with catsup or atsara or chili soy sauce-vinegar sauce.

Is the temperature 475 celsius or farenheit? Im just learning now to use the turbo broiler.
